Another "HotchKiss"!
While not something I cook often . . . . this one is great!
Ingredients
- 1 tablespoon vegetable oil
- 1 (16 ounce) package medium shells
- 8 tablespoons butter
- 2 cups total of shredded Muenster cheese, Cheddar cheese, and Monterey Jack cheese
- 1 1/2 cups half-and-half (or milk or whipping cream, use what is on hand!)
- 8 ounces cubed Velveeta cheese
- 2 eggs, beaten
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- Bread crumbs.
Directions
- Bring a large pot of lightly salted water to a boil. Add the oil and the pasta and cook for 8 to 10 minutes or until al dente; drain well and return to cooking pot.
- Stir butter into the shells.
- Add ALL cheese, half-and-half beaten eggs, salt, pepper and stir until melted and combined.
- In a large bowl, combine the Muenster cheese, mild and sharp Cheddar cheeses, and Monterey Jack cheese; mix well.
- Cover with bread crumbs. I like this; if you don't . . . don't put them on!
- Preheat oven to 350 degrees F (175 degrees C).
- In an over preheated to 350 degree, bake 35 minutes or until hot and bubbling around the edges; serve.

The story is set in the early 1900s in Korea. A female child is born to a calligrapher and his wife. The child, names herself Najin. She forges her own destiny, balancing Confucian tradition of her father and the Christianity of her mother. To escape an arranged marriage, Najin goes to the emperor's palace to be a companion to the princess' which she ends up losing due to the collapse of the Dynasty. She continues to pursue her own desires to work and become educated. She meets a man and gets married . . . but sadly, never gets to spend any time with him and eventually gives him up as lost. They end up reunited and Japan surrendering. The story is OK; not gripping . . . but interesting none the less.

We are taught REPEATEDLY and over and over that patience is a virtue. I have never understood this. Patience can be a virtue sometimes; but, like anything else . . . not always. Yet, we never hear that impatience is a virtue! And I mean NEVER.
I always remember this idea from college . . . what is there was a vaccine that was 60% effective and kills 5% . . . but the disease was going to kill 80% of the population in 30 days. The CONSERVATIVE thing to do is give everyone the vaccination. Typical thought is that the conservative action is to be patient and wait for a better solution; this is not the case in the above situation.
I tend to make decisions quickly, unless there is no reason . . . then I wait until I NEED to make the decision, especially if it is a critical decision.
In My life patience is limited (surprising no one!). I use it as a tool; when and where appropriate. Patience, like anything else has it limitations! It is not always the RIGHT chose; don’t believe the cliché . . . do what is right.
